Ingredients
• 250 g spaghetti
• 300 g raw shrimp, peeled and deveined
• 150 g crumbled feta cheese
• 2 tbsp olive oil
• 2 garlic cloves, minced (optional)
• 1 tbsp Roasted Garlic Salt – The Spice Age
• Fresh parsley, chopped
• Freshly ground pepper
• ½ cup reserved pasta cooking water
Preparation
Cook the pasta
- Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, following the package directions.
- Drain and reserve ½ cup of the cooking water.
Sauté the shrimp
- In a large pan, heat the olive oil over medium heat. Add the minced garlic (if using) and sauté for a few seconds until fragrant.
- Add the shrimp and cook for 2 to 3 minutes per side, or until they turn pink and opaque. Season with Roasted Garlic Salt – The Spice Age and a pinch of pepper.
Make the sauce
- Add the crumbled feta to the pan with the shrimp. Pour in a bit of the reserved pasta water and stir to create a creamy texture.
Combine with pasta
- Add the cooked spaghetti and toss well to coat. Adjust with more pasta water if needed. Taste and adjust seasoning as desired.
Garnish and serve
- Serve immediately, topped with fresh parsley, a drizzle of olive oil, and freshly ground pepper.
