Ingredients
Patties
(makes about 8 patties)
- 2 medium zucchinis, grated (or finely chopped broccoli)
- 2 eggs
- 80 g grated cheese (Parmesan or mozzarella)
- 50 g breadcrumbs (or almond flour for gluten-free)
- 1 garlic clove, grated (optional)
- Salt and pepper, to taste
- 1 tsp The Saucy Green Goddness Seasoning - The Spice Age
- Oil for cooking
Dip
- 3 tbsp Greek yogurt or fromage blanc
- 1 tbsp mayonnaise
- 1 tsp The Saucy Green Goddness Seasoning - The Spice Age
- A squeeze of lemon juice
- Salt and pepper, to taste
Preparation
Prepare the patties
- Grate the zucchinis and squeeze out excess water using a clean kitchen towel.
- In a large bowl, mix the drained zucchini with eggs, cheese, breadcrumbs, garlic, The Saucy Green Goddness Seasoning - The Spice Age, salt, and pepper.
- Shape the mixture into small, flat patties.
Cook the patties
- Heat oil in a frying pan over medium heat. Cook the patties for 3–4 minutes on each side until golden brown.
Make the dip and serve
- In a small bowl, combine all the dip ingredients and let sit for 10 minutes to develop flavours.
- Serve the patties hot with the Green Goddess dip. Optionally, sprinkle with grated cheese for garnish.
