Ingredients
- 1 cup shrimp, peeled and deveined
- 1 cup cooked rice (jasmine or basmati)
- ½ cup cooked edamame
- 100 ml coconut milk
- ½ teaspoon Cajun Invasion Seasoning – The Spice Age
- Drizzle of lemon juice (optional)
- Coconut-Cajun sauce (optional)
- Salt and pepper, to taste
Toppings: drizzle of coconut-cajun sauce, lemon wedge, sliced green onion
Preparation
Shrimp
- In a bowl, toss shrimp with Cajun Invasion Seasoning – The Spice Age and a little olive oil.
- Heat a skillet over medium-high heat and sauté shrimp for 2–3 minutes per side, until pink, juicy, and perfectly seared.
Coconut Cajun Sauce
- In a small saucepan, heat coconut milk over low.
- Add a little extra Cajun Invasion Seasoning – The Spice Age if you love a spicy kick.
- Stir well and let simmer until it thickens slightly.
- Add a dash of lemon juice.

- Layer rice, edamame, and sizzling Cajun shrimp in a bowl.
